I like sqlite because it seems to have a really good balance between simplicity and power. If you're keen on making a desktop database application both crossplatform and exceedingly easy to install, and don't need RDBMS features mysql doesn't have, take a look.
Writing a Apache2 network layer to add multiuser capabilities to a file-based db seems like .. umm... well let's just call it an interesting hack.
